Tamales for breakfast

I have the pleasure of working with two really wonderful woman that make going to work enjoyable. One is our Staff Accountant, my 2nd hire here at the company. She loves to cook and dreams of one day having her own restaurant. Today is the company’s 7 year anniversary so last night she put in many hours to make tamales for the company party this afternoon. Some are beef with an earthy red sauce and some are chicken with a softly spiced green sauce. She made a point of bringing in some early this morning for Carrie and I to have for breakfast. I at two already and plan to eat one an hour for the rest of the morning so that I won’t be hungary when I go to my doctor’s appointment at 1 this afternoon.

Yesterday I was so busy that I never really had lunch. Carrie brought back a Jamba Juice from her lunch that she had about two sips of and then decided she was full which saved my day when she offered it to me. That and some cheese popcorn hit the spot but I know it was not good for the babies. I’ll make up for it today with tamales!
